Recipe from joy of baking
Nice fresh strawberry bread/ cake.
Stephanie from Joy of baking says it is bread but I felt it is cake.
Hahaha! Anyway it's delicious, very filling and healthy.
Very good for breakfast!
113g unsalted butter, room temperature
150g granulated white sugar (I used 120 only)
3 large eggs
260g superfine flour
1/2 tsp baking powder
1/2 tsp baking soda (I put slightly lesser at 1/3 tsp)1/4 tsp salt
1 tsp ground cinnamon
120g sour cream or plain yogurt (I used strawberry yogurt)
1/2 cup toasted walnut, chopped
1 1/2 cups fresh strawberries, diced
2. Place the nuts on a baking sheet and bake for about 8 minutes or until brown and fragrant.
3. Use mixer beat butter until soften (about 1 min)
4. Add the sugar and continue to beat until light and fluffy (about 2-3 minutes).
5. Add the eggs, one at a time, beating well after each addition. Beat in the vanilla extract.
6. In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon.
7. With the mixer on low, add the flour mixture (in three additions) and sour cream (in two additions) alternately, starting and ending with the flour. Mix only until combined.
8. Gently fold in the dice strawberry and chopped nuts.
9. Bake for about 60-70 minutes
